Mindine chop

Using the the part of the cow ribs that usually are not so "friendly cooked", this recipe uses cauliflower puree and marinated pineapple. The meat is cooked for 18 hours until tender.

The dish is not very photogenic and if plated in a dark baground it could have worked better. But this was taken in a rush, under a drooling customer's mouth.
