Small Jackin

This is a deconstruction of the traditional portuguese dish. But in this case the recipe does not throw away the spine and uses it in the plate. It gives an extra crunchiness to it that makes it delicious.

In the first photo I recon I exagerated in the apperture, giving too much bluriness to the dish. I think the photo is good but the dish does not look at its best. So, I posted a second picture to better understanding.
