Salt crusted sea bass

This sea bass cooked at low temperature has a crust of air salt.
How is this possible? you may ask. It's easy, but to learn that trick you must buy the CSI book.

The theme of this picture was about using only the light coming from candles. We managed to do that but, like in the recipe, we had to use a little trick to better lighten the fish (of course post production helped). Some might say it's a bit exagerated in the post production. Don't forget that this is food porn and like our friends in the other porn business, we do what we can in post production.
